The maintenance isn't that bad unless your riding hard enduro style everytime you're on it. I have a fe501 and do oil changes every 20-25 hours. Didn't check the valves from 50 to 140 hrs and they were still well in spec. I've never had to shim any valves from new. At 140 hrs I also did a leak down test in the cylinder and had less that 1% loss. Surprisingly, somehow, the xt is better suited for that. There is a pretty big gap in trail ability between the 690 and 500 though. The 500 is really a dirtbike with lights, and can handle ANYTHING any other dirtbike can handle. The 690 is a good bit heavier. Honestly you could replace your bmw AND the XT with the 690.
